🥧 Pecan Pie Cookies (Sweet, Nutty, and Chewy)

Ingredients (about 24 cookies)
Cookie Base:
- 1 cup butter, softened
- 1 cup brown sugar
- ½ cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 2½ cups all-purpose flour

Pecan Pie Topping:
- 1 cup chopped pecans
- ½ cup brown sugar
- ¼ cup corn syrup or honey
- 2 tbsp butter, melted
- 1 tsp vanilla extract
Instructions
- Preheat oven: 175°C / 350°F. Line a baking sheet with parchment paper.
- Make cookie dough:
- Cream butter and sugars until light and fluffy.
- Beat in eggs and vanilla.
- Mix in flour, baking soda, and salt until combined.
- Form cookies:
- Scoop 1–2 tbsp dough onto the prepared sheet. Flatten slightly.
- Add topping:
- Mix pecans, brown sugar, corn syrup, melted butter, and vanilla.
- Spoon a small amount on top of each cookie, pressing lightly.
- Bake: 12–15 minutes until cookies are golden and topping is bubbly.
- Cool: Let cookies cool on the sheet for 5 minutes, then transfer to a wire rack.
Tips
- Use lightly toasted pecans for extra flavor.
- For a softer cookie, bake closer to 12 minutes; for crunchier, 15 minutes.
