Peanut Butter Balls

Makes about 24 balls

Ingredients

  • 1 cup creamy peanut butter
  • ½ cup unsalted butter, softened
  • 2 cups powdered sugar
  • 2 cups crushed graham crackers (or 2 cups Rice Krispies for a crunchier version)
  • 12 oz chocolate chips (semi-sweet or milk chocolate)
  • 1 tbsp vegetable oil (optional, for smoother chocolate coating)

Instructions

1. Make the Peanut Butter Mixture

  • In a large bowl, mix peanut butter and softened butter until smooth.
  • Stir in powdered sugar and crushed graham crackers until a dough forms.

2. Shape the Balls

  • Roll mixture into 1-inch balls.
  • Place on a baking sheet lined with parchment paper.
  • Chill in the fridge 30–60 minutes to firm up.

3. Coat in Chocolate

  • Melt chocolate (and oil if using) in a microwave or double boiler.
  • Dip each peanut butter ball into the chocolate, letting excess drip off.
  • Place back on parchment paper.

4. Chill & Serve

  • Refrigerate until chocolate is set, about 30 minutes.
  • Store in an airtight container in the fridge for up to 2 weeks.

  • Peanut butter alternatives: almond butter, cashew butter
  • Add-ins: chopped nuts, mini chocolate chips, or shredded coconut inside
  • Seasoning twist: sprinkle a tiny pinch of sea salt on top of chocolate before it sets
