Peanut butter balls

Here’s a simple Peanut Butter Balls recipe 🍫🥜—sweet, chocolatey, and no-bake!


Ingredients (makes ~24 balls)

  • 1 cup creamy peanut butter
  • ½ cup unsalted butter, softened
  • 2 cups powdered sugar
  • 2 cups semi-sweet chocolate chips
  • 2 tbsp shortening or coconut oil (optional, for smoother chocolate coating)

Instructions

  1. Make the filling
    • In a large bowl, mix peanut butter and softened butter until smooth.
    • Gradually add powdered sugar, mixing until well combined.
    • Roll mixture into small balls (~1 inch) and place on a parchment-lined tray.
  2. Chill
    • Refrigerate the peanut butter balls for at least 30 minutes to firm up.
  3. Melt chocolate
    • In a microwave-safe bowl, melt chocolate chips with shortening or coconut oil in 30-second intervals, stirring until smooth.
  4. Dip peanut butter balls
    • Using a fork or toothpick, dip each ball into the melted chocolate, covering completely.
    • Return to parchment-lined tray.
  5. Set
    • Refrigerate until chocolate is firm, about 1 hour.

Tips & Variations

  • Crunchy version: add ½ cup crushed graham crackers or rice cereal to the filling.
  • Flavor twist: use peanut butter + almond butter or add a pinch of sea salt on top.
  • Mini bites: roll smaller balls for bite-sized treats.
  • Make ahead: store in the fridge for up to 2 weeks, or freeze for longer storage.
