Peach Cobbler

Ingredients (serves 6–8):

For the filling:

  • 4 cups fresh or canned peaches (sliced)
  • ½ cup granulated sugar
  • ¼ cup brown sugar
  • 1 tsp vanilla extract
  • ½ tsp cinnamon
  • 1 tsp lemon juice
  • 2 tsp cornstarch (optional, for thicker filling)

For the topping:

  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 1 ½ tsp baking powder
  • ¼ tsp salt
  • ½ cup milk
  • ½ cup unsalted butter, melted
  • 1 tsp vanilla extract

Instructions:

  1. Preheat oven to 350°F (175°C).
  2. Prepare peaches: In a medium bowl, combine peaches, granulated sugar, brown sugar, vanilla, cinnamon, lemon juice, and cornstarch (if using). Stir gently and set aside.
  3. Prepare topping: In another bowl, mix flour, sugar, baking powder, and salt. Add milk, melted butter, and vanilla extract. Stir until smooth.
  4. Assemble: Pour peach mixture into a greased 9×13-inch baking dish. Spoon the batter over the peaches—it’s okay if some peaches peek through.
  5. Bake: Bake 40–45 minutes until topping is golden brown and cooked through.
  6. Serve: Let it cool slightly before serving. Delicious with vanilla ice cream or whipped cream.
