🥗 Easy Pasta Salad

Serves 4–6


Ingredients

  • 8 oz (225 g) pasta (rotini, penne, or bowtie)
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • ½ cup red bell pepper, diced
  • ¼ cup red onion, finely chopped
  • ½ cup black olives (optional)
  • ½ cup feta cheese (optional)
  • 2–3 tbsp fresh parsley, chopped

Dressing

  • ¼ cup olive oil
  • 2 tbsp red wine vinegar
  • 1 tsp Dijon mustard
  • 1 clove garlic, minced
  • Salt & black pepper to taste

Instructions

  1. Cook pasta according to package instructions. Drain and rinse under cold water to cool.
  2. Prepare veggies: chop tomatoes, cucumber, pepper, onion, and olives.
  3. Make dressing: whisk olive oil, vinegar, mustard, garlic, salt, and pepper.
  4. Combine: In a large bowl, mix pasta, veggies, and dressing.
  5. Add cheese & herbs: fold in feta and parsley.
  6. Chill: Refrigerate 30–60 minutes for best flavor.
