Palatschinke

Ah, palatschinke! These are thin, crepe-like pancakes popular in Central and Eastern Europe, including Hungary and Austria. They can be served sweet or savory, and are usually rolled or folded with fillings.


Basic Sweet Palatschinke Recipe (for 4 servings, ~8–10 pancakes)

Ingredients

  • 1 cup (125 g) all-purpose flour
  • 1½ cups (360 ml) milk
  • 2 eggs
  • 1–2 tablespoons sugar (optional, for sweet version)
  • Pinch of salt
  • 2 tablespoons melted butter or oil (plus extra for frying)
  • Filling: jam, sweetened cottage cheese, Nutella, or fruit

Instructions

  1. Mix the batter: Whisk together flour, milk, eggs, sugar, salt, and melted butter until smooth. Let it rest for 15–20 minutes.
  2. Heat a non-stick pan: Lightly oil or butter the surface.
  3. Cook pancakes: Pour a small amount of batter into the pan and swirl to cover the bottom thinly. Cook 1–2 minutes per side until lightly golden.
  4. Add filling: Spread your favorite filling over the pancake while warm, then roll or fold.
  5. Serve: Dust with powdered sugar, drizzle with syrup, or top with fruit or whipped cream.

Savory version: Leave out sugar in the batter and fill with cheese, mushrooms, or ham.
