No-bake eclair cake

Ah, a no-bake eclair cake—a super easy dessert that tastes like the classic eclair but doesn’t require baking. It’s made with graham crackers (or cookies), pudding, and whipped topping, then chilled until set.


Ingredients (for 8 servings)

  • 1 package graham crackers (or digestive biscuits)
  • 2 packages (about 85 g each) instant vanilla pudding mix
  • 3 cups milk
  • 250 ml heavy cream, whipped (or use whipped topping)
  • 1 tablespoon sugar (if whipping cream)
  • 200 g chocolate chips or chopped chocolate
  • 2 tablespoons butter
  • 2 tablespoons milk (for chocolate glaze)

Instructions

  1. Make the pudding:
    • Whisk instant pudding mix with milk until thickened.
    • Fold in whipped cream to make a creamy filling.
  2. Layer the cake:
    • In a rectangular pan, place a single layer of graham crackers.
    • Spread half of the pudding mixture over the crackers.
    • Add another layer of crackers, then the remaining pudding.
    • Top with a final layer of crackers.
  3. Make the chocolate glaze:
    • In a small saucepan, melt chocolate, butter, and milk together until smooth.
    • Pour over the top layer of crackers and spread evenly.
  4. Chill:
    • Refrigerate for at least 4 hours, preferably overnight, so the crackers soften into a cake-like texture.
  5. Serve:
    • Slice and enjoy a creamy, chocolatey treat without baking!
