Mozzarella-Stuffed Rosemary Parmesan Soft Pretzels

Ingredients (makes 8 pretzels)

Dough

  • 1½ cups warm water (110°F / 43°C)
  • 1 tbsp sugar
  • 2¼ tsp active dry yeast (1 packet)
  • 4 cups all-purpose flour
  • 1 tsp salt
  • 2 tbsp melted butter

Filling

  • 8 mozzarella string cheese sticks (or cut mozzarella into sticks)

Baking Bath

  • ⅔ cup baking soda
  • 10 cups water

Topping

  • 1 egg (beaten, for egg wash)
  • ½ cup grated Parmesan cheese
  • 1 tbsp fresh rosemary, finely chopped (or 1 tsp dried)
  • Coarse sea salt
  • 2 tbsp melted butter (for brushing)

Instructions

  1. Activate yeast
    • Stir sugar into warm water.
    • Sprinkle yeast on top and let sit 5–10 minutes until foamy.
  2. Make the dough
    • Add flour, salt, and melted butter.
    • Mix until a soft dough forms.
    • Knead 5–7 minutes until smooth and elastic.
    • Cover and let rise 45–60 minutes until doubled.
  3. Shape & stuff
    • Preheat oven to 425°F (220°C).
    • Line baking sheets with parchment.
    • Divide dough into 8 pieces.
    • Roll each piece into a long rope.
    • Flatten slightly, place mozzarella in the center, and pinch tightly to seal.
    • Roll gently back into a rope and shape into pretzels.
  4. Baking soda bath
    • Bring water to a boil, add baking soda carefully.
    • Boil pretzels 30 seconds each, then remove with a slotted spoon.
    • Place on baking sheet.
  5. Top & bake
    • Brush pretzels with egg wash.
    • Sprinkle with Parmesan, rosemary, and coarse salt.
    • Bake 12–15 minutes until deep golden brown.
  6. Finish
    • Brush with melted butter right after baking.
    • Serve warm for maximum cheese pull.

Tips for Success

  • Seal the dough really well or cheese will leak out.
  • Chill mozzarella sticks for 10 minutes before stuffing—helps prevent blowouts.
  • Want extra flavor? Add garlic powder to the topping.
