Monkey butter is a smooth, fruity spread made with bananas, pineapple, and sugarβgreat on toast, pancakes, waffles, or biscuits.
Ingredients (about 2 cups)
- 3 ripe bananas, mashed
- 1 can (400 g / 14 oz) crushed pineapple with juice
- 1Β½ cups sugar
- 2 tbsp lemon juice
- Optional: Β½ tsp cinnamon or vanilla
Instructions
- Combine ingredients:
- In a saucepan, mix mashed bananas, crushed pineapple (with juice), sugar, and lemon juice.
- Cook:
- Bring to a gentle boil over medium heat, stirring often.
- Lower heat and simmer 15β20 minutes until thick and glossy.
- Blend (optional):
- For extra smooth monkey butter, blend briefly with a hand blender.
- Cool & store:
- Let cool, then transfer to clean jars.
- Store in the refrigerator up to 2 weeks.
Ways to Use It

Tips
- The riper the bananas, the sweeter the flavor.
