Ingredients
For Meatloaf (serves ~4–6)
- 1 ½ lb ground beef (or a mix of beef & pork)
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 cup breadcrumbs
- 1 egg
- ½ cup milk
- 2 tbsp ketchup
- 1 tsp Worcestershire sauce
- 1 tsp salt
- ½ tsp black pepper
- Optional: ½ tsp paprika or dried herbs
For Mashed Potatoes
- 2 lbs potatoes, peeled and cut into chunks
- 4 tbsp butter
- ½ cup milk (adjust for desired creaminess)
- Salt & pepper, to taste
- 1 cup shredded cheddar or your favorite cheese
Optional Meatloaf Topping
- ¼ cup ketchup
- 1 tbsp brown sugar
Instructions
1. Make Meatloaf
- Preheat oven to 350°F (175°C).
- In a bowl, combine ground meat, onion, garlic, breadcrumbs, egg, milk, ketchup, Worcestershire sauce, salt, and pepper. Mix gently.
- Shape mixture into a loaf and place in a greased 9×5-inch loaf pan.
- Optional: Mix ketchup and brown sugar and spread over the top for a glaze.
- Bake for 55–65 minutes, until cooked through (internal temp 160°F / 71°C).
2. Make Mashed Potatoes
- Boil potatoes in salted water until tender, about 15–20 minutes.
- Drain and mash with butter and milk.
- Stir in cheese until melted and smooth. Season with salt and pepper.
3. Serve
Slice meatloaf and serve alongside cheesy mashed potatoes. Optional: pour pan drippings or gravy over both for extra flavor.
Tips
- Use half ground pork for a juicier meatloaf.
- Can add sautéed mushrooms or bell peppers to mashed potatoes for extra flavor.
- For a cheesy twist on meatloaf, stuff slices of cheese inside before baking.
