Mashed Potato Muffins

Ingredients

  • 2 cups mashed potatoes (leftover or fresh)
  • 1 large egg
  • ½ cup shredded cheese (cheddar, mozzarella, or Parmesan)
  • ¼ cup milk or cream
  • 2 tbsp melted butter or olive oil
  • 2 tbsp chopped green onions or chives (optional)
  • Salt and pepper, to taste
  • Optional add-ins: cooked bacon bits, garlic powder, herbs, sour cream

Instructions

  1. Preheat oven to 375°F (190°C). Grease or line a muffin tin.
  2. Mix mashed potatoes, egg, milk, and butter until smooth.
  3. Stir in cheese, green onions, salt, pepper, and any add-ins.
  4. Spoon mixture into muffin cups, filling about ¾ full.
  5. Bake for 20–25 minutes, until set and lightly golden on top.
  6. Cool slightly and remove from the pan. Serve warm.

Tips & Variations

  • For extra crisp tops, sprinkle cheese or breadcrumbs on top before baking.
  • Make them mini muffins for appetizers (bake ~15 minutes).
