Macaroni and cheese

Ahhh, the classic 🧀💛 let’s do real-deal, creamy macaroni & cheese—no sad noodles allowed.

🧀 Creamy Homemade Mac & Cheese

Ingredients

  • 8 oz elbow macaroni
  • 2 tbsp butter
  • 2 tbsp flour
  • 2 cups milk (warm is best)
  • 1½–2 cups shredded cheese (sharp cheddar is king; mix with Monterey Jack or mozzarella for meltiness)
  • ½ tsp salt
  • ¼ tsp black pepper
  • ¼ tsp paprika (optional but nice)
  • Optional upgrades: garlic powder, mustard powder, hot sauce

Instructions

  1. Cook pasta in salted water until just al dente. Drain.
  2. Make the sauce: Melt butter over medium heat. Whisk in flour; cook 1 minute (no browning).
  3. Slowly whisk in milk. Cook until thick and smooth.
  4. Lower heat and stir in cheese a handful at a time until silky. Season to taste.
  5. Combine pasta and sauce. Serve immediately… or keep going 👇

🔥 Optional baked version

  • Pour into a buttered dish, top with extra cheese (or buttered breadcrumbs).
  • Bake at 375°F / 190°C for 15–20 min until bubbly.

✨ Fun add-ins

  • Bacon, ham, or shredded chicken
  • Jalapeños or green chiles
  • Broccoli or peas
  • Buffalo sauce or truffle oil (tiny drizzle!)
