🧀 Creamy Homemade Mac & Cheese
Ingredients
- 8 oz elbow macaroni
- 2 tbsp butter
- 2 tbsp flour
- 2 cups milk (warm is best)
- 1½–2 cups shredded cheese (sharp cheddar is king; mix with Monterey Jack or mozzarella for meltiness)
- ½ tsp salt
- ¼ tsp black pepper
- ¼ tsp paprika (optional but nice)
- Optional upgrades: garlic powder, mustard powder, hot sauce
Instructions
- Cook pasta in salted water until just al dente. Drain.
- Make the sauce: Melt butter over medium heat. Whisk in flour; cook 1 minute (no browning).
- Slowly whisk in milk. Cook until thick and smooth.
- Lower heat and stir in cheese a handful at a time until silky. Season to taste.
