Ingredients (4–6 servings)

Fruits (fresh or frozen):

  • 1 small apple, peeled and diced
  • Optional: ½ cup blueberries or raspberries

Soup base:

  • 4 cups water
  • ½ cup sugar (adjust to taste)
  • 1 cinnamon stick
  • 3–4 whole cloves
  • 1–2 tbsp lemon juice
  • 1–2 tsp cornstarch (optional, for thickening)
  • ½ cup sour cream or plain yogurt (optional, for creamy version)

Directions

Step 1: Cook the fruit

  1. In a saucepan, combine water, sugar, cinnamon stick, and cloves. Bring to a gentle boil.
  2. Add firmer fruits first (like apples and peaches) and simmer 5–7 minutes.
  3. Add softer fruits (cherries, strawberries, berries) and cook 2–3 more minutes.

Step 2: Thicken (optional)

  1. If you like a slightly thicker soup, mix cornstarch with a little cold water to make a slurry.
  2. Stir into the soup and simmer 1–2 minutes until slightly thickened.

Step 3: Add tang and chill

  1. Remove from heat and stir in lemon juice.
  2. For a creamy version, whisk in sour cream or yogurt off the heat.
  3. Let the soup cool, then refrigerate at least 2 hours before serving.

Step 4: Serve

  • Serve chilled in bowls.
  • Garnish with fresh mint or a few whole berries.
  • Optional: a splash of fruit liqueur (like cherry or peach) for adults.

Tips

  • Can be made warm or cold, depending on season.
  • Use seasonal fruits for best flavor; frozen fruits work well in winter.
  • Adjust sweetness to taste — the natural tartness of cherries or berries adds complexity.
  • For extra elegance, swirl a little cream on top before serving.
