Instructions

  1. Prepare beans: If using dried beans, soak overnight or do quick soak (boil 5 min, soak 1 hr), then drain.
  2. Sauté aromatics: In a large pot, heat oil or butter. Sauté onion, garlic, carrot, and celery until softened.
  3. Add paprika: Remove from heat and stir in paprika (don’t burn—it turns bitter).
  4. Add liquid & beans: Add beans, broth, bay leaf, caraway seeds, and potatoes. Bring to a boil.
  5. Simmer: Reduce heat, cover, and simmer 1–1.5 hours (or until beans are tender).

  7. Season: Taste and adjust salt, pepper, or paprika. Remove bay leaf before serving.
