Instructions:

  1. Prepare the pan:
    • Line an 8×8-inch (20×20 cm) baking pan with parchment paper and lightly grease it.
  2. Make the peanut butter mixture:
    • In a medium saucepan over low heat, combine peanut butter and honey.
    • Stir until smooth and slightly warmed. Remove from heat and stir in vanilla extract (and salt if using).
  3. Mix with cereal:
    • Place the crispy rice cereal in a large bowl.
    • Pour the peanut butter mixture over the cereal and mix until all the cereal is coated.
  4. Press into pan:
    • Transfer the mixture into the prepared pan.
    • Press down firmly with a spatula or your hands to create an even layer.
  5. Add chocolate topping:
    • Melt chocolate chips in a microwave-safe bowl in 20-second intervals, stirring each time until smooth.

  6. Set and cut:
