Golden Crispy Chicken with Parmesan Mushroom Sauce

Ingredients (serves 4)

For the chicken:

  • 4 boneless, skinless chicken breasts
  • ½ cup all-purpose flour
  • 1 tsp paprika
  • ½ tsp garlic powder
  • Salt & pepper
  • 2 eggs, beaten
  • 1 cup breadcrumbs (panko recommended)
  • 3–4 tbsp olive oil or butter, for frying

For the mushroom Parmesan sauce:

  • 2 cups sliced mushrooms (button, cremini, or a mix)
  • 2 tbsp butter
  • 2 cloves garlic, minced
  • 1 cup heavy cream
  • ½ cup grated Parmesan cheese
  • Salt & black pepper, to taste
  • 1 tsp fresh thyme or parsley (optional)

Instructions

  1. Prep chicken
    • Pat chicken breasts dry.
    • Season with salt, pepper, and paprika.
  2. Bread the chicken
    • Dredge chicken in flour, shaking off excess.
    • Dip in beaten eggs, then coat evenly with breadcrumbs.
  3. Cook chicken
    • Heat oil/butter in a large skillet over medium heat.
    • Fry chicken 4–5 minutes per side until golden brown and cooked through (internal temp 165°F/74°C).
    • Transfer to a plate and cover to keep warm.
  4. Make mushroom Parmesan sauce
    • In the same skillet, melt butter.
    • Sauté mushrooms 5–6 minutes until browned.
    • Add garlic and cook 30 seconds until fragrant.
    • Pour in heavy cream and bring to a gentle simmer.
    • Stir in Parmesan cheese until melted and smooth.
    • Season with salt, pepper, and thyme/parsley.
  5. Serve
    • Spoon mushroom Parmesan sauce over crispy chicken.
    • Pair with pasta, mashed potatoes, rice, or steamed vegetables.

Tips & Variations

  • Extra crispy: Use panko breadcrumbs and a mix of butter + oil for frying.
  • Cheesy sauce: Add more Parmesan or a splash of cream for a richer sauce.
  • Flavor boost: Sauté onions with mushrooms or add a splash of white wine.
  • Make it lighter: Bake breaded chicken at 400°F (200°C) for 20–25 minutes instead of frying.
