Garlic soup

Here’s a classic Garlic Soup recipe 🥣🧄
Rich, flavorful, and perfect for a cozy meal—simple yet deeply comforting.


Ingredients (serves 4)

  • 2 tbsp olive oil or butter
  • 2 heads garlic (about 20 cloves), peeled and minced
  • 1 medium onion, chopped
  • 4 cups chicken or vegetable broth
  • 1 tsp dried thyme (or 2 sprigs fresh)
  • 1 bay leaf
  • Salt & pepper, to taste
  • ½ cup heavy cream or milk (optional, for creamy version)
  • Croutons or toasted bread, for serving
  • Optional garnish: chopped parsley, grated Parmesan

Instructions

  1. Sauté aromatics
    • Heat oil or butter in a large pot over medium heat.
    • Add onion and cook 3–4 minutes until softened.
    • Add minced garlic and cook 1–2 minutes until fragrant (don’t burn).
  2. Add broth and seasonings
    • Pour in chicken or vegetable broth.
    • Add thyme, bay leaf, salt, and pepper.
    • Bring to a boil, then reduce heat and simmer 20 minutes.
  3. Blend (optional)
    • For a smoother soup, remove bay leaf and use an immersion blender or regular blender to puree until smooth.
  4. Add cream (optional)
    • Stir in cream or milk for a richer, creamier soup.
    • Simmer 5 more minutes.
  5. Serve
    • Ladle into bowls, top with croutons or toasted bread.
    • Garnish with parsley or Parmesan if desired.

Tips

  • Roasting the garlic first gives a sweeter, milder flavor.
  • Adjust garlic amount to taste—some like it very garlicky, others milder.
  • Can add potatoes for a thicker, heartier soup.
  • Serve with a drizzle of olive oil for extra richness.
