Here’s a down-home, classic Southern fried chicken—crispy crust, juicy meat, no shortcuts.

🍗 Classic Southern Fried Chicken

Ingredients

  • 1 whole chicken, cut into 8 pieces (or thighs & drumsticks)

Buttermilk Soak

  • 2½ cups buttermilk
  • 1 tbsp hot sauce (optional)
  • 1½ tsp salt
  • 1 tsp black pepper

Seasoned Flour

  • 3 cups all-purpose flour
  • 2 tsp salt
  • 2 tsp black pepper
  • 2 tsp paprika
  • 1½ tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp cayenne (optional)

For Frying

  • Peanut or canola oil

Instructions

  1. Marinate:
    Mix buttermilk, hot sauce, salt, and pepper. Add chicken, cover, refrigerate 4 hours to overnight.
  2. Dredge:
    Remove chicken, let excess drip. Coat heavily in seasoned flour, pressing it in.
  3. Rest:
    Place breaded chicken on a rack 10–15 minutes (helps crust stick).
  4. Fry:
    Heat oil to 325–340°F in a cast-iron skillet.
    Fry in batches 12–15 minutes, turning, until deep golden and internal temp hits 165°F.
  5. Drain:
    Rest on a wire rack.
