🍗 Crispy Fried Chicken

Serves 4–6


Ingredients

  • 4–6 chicken pieces (drumsticks, thighs, breasts, wings)
  • 2 cups buttermilk
  • 2 cups all-purpose flour
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp cayenne pepper (optional, for heat)
  • 1 tsp salt
  • ½ tsp black pepper
  • Oil for frying (vegetable, canola, or peanut oil)

Instructions

1. Marinate the Chicken

  1. Place chicken pieces in a bowl and pour buttermilk over them.
  2. Cover and marinate 1–4 hours in the refrigerator.

2. Prepare the Coating

  1. In a shallow bowl, mix flour, paprika, garlic powder, onion powder, cayenne, salt, and black pepper.

3. Coat the Chicken

  1. Remove chicken from buttermilk, letting excess drip off.
  2. Dredge in the flour mixture, pressing lightly so it sticks.
  3. Place coated pieces on a plate or wire rack.

4. Fry the Chicken

  1. Heat 2–3 inches of oil in a deep skillet or Dutch oven to 350°F / 175°C.
  2. Fry chicken in batches, 10–15 minutes per side, depending on size.
  3. Use a meat thermometer: chicken is done at 165°F / 74°C internally.
  4. Drain on paper towels or a wire rack.

💡 Tips

  • For extra crispiness, double-dip: dip in buttermilk again, then flour.
  • Don’t overcrowd the pan; it lowers oil temperature and makes coating soggy.
  • Optional: season flour with herbs like thyme or oregano for extra flavor.
