French Onion Meatloaf

Ingredients (4–6 servings)

Meatloaf

  • 1½ lbs (680 g) ground beef (or a mix of beef and pork)
  • 1 large onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup French onion soup (canned or homemade)
  • 1 cup breadcrumbs
  • 2 eggs
  • 1 tsp Worcestershire sauce
  • ½ tsp salt
  • ½ tsp black pepper

Topping

  • ½ cup French onion soup
  • 2 tbsp ketchup or tomato paste (optional, for glaze)

Instructions

  1. Preheat oven
    • 350°F (175°C).
    • Grease a 9×5-inch loaf pan or line with parchment.
  2. Sauté onions
    • In a skillet, cook chopped onion in a little oil until caramelized, about 5–7 minutes.
    • Add garlic and cook 1 more minute. Let cool slightly.
  3. Mix meatloaf
    • In a large bowl, combine ground meat, caramelized onions, garlic, French onion soup, breadcrumbs, eggs, Worcestershire, salt, and pepper.
    • Mix until just combined (don’t overmix).
  4. Shape & bake
    • Transfer mixture to loaf pan, shape into a loaf.
    • Spread ½ cup French onion soup (and ketchup if using) over the top.
    • Bake 55–65 minutes until internal temperature reaches 160°F (71°C).
  5. Rest & serve
    • Let the meatloaf rest 5–10 minutes before slicing.

Tips

  • Extra flavor: Stir in a little shredded Swiss or cheddar cheese into the meat mixture.
  • Crispy top: Broil 2–3 minutes at the end for a caramelized crust.
  • Make-ahead: Assemble and refrigerate; bake the next day.
  • Low-carb option: Replace breadcrumbs with almond flour or crushed pork rinds.
