🥬 Farcellets de Col (Stuffed Cabbage Rolls)
“Farcellets de col” is a traditional Catalan/Spanish dish—cabbage leaves stuffed with meat, rice, or vegetables, cooked in a savory sauce. Here’s an easy version.
Ingredients (4–6 servings)
- 8–10 large cabbage leaves
- 300–400 g ground beef or pork (or mix)
- ½ cup cooked rice
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 egg
- Salt & pepper
- 1 tsp paprika or smoked paprika (optional)
- 1 can (400 g) tomato sauce or crushed tomatoes
- 1 tbsp olive oil
Instructions
- Prepare cabbage leaves:
- Boil a large pot of water and blanch cabbage leaves 2–3 minutes until soft. Drain and set aside.
- Make filling:
- In a bowl, mix ground meat, cooked rice, onion, garlic, egg, salt, pepper, and paprika.
- Assemble rolls:
- Place 1–2 tbsp of filling on each cabbage leaf.
- Fold sides over the filling and roll tightly.
- Cook:
- Heat olive oil in a large pan over medium heat.
- Place rolls seam-side down and sear briefly.
- Pour tomato sauce over rolls.
- Cover and simmer 25–30 minutes until meat is cooked and flavors meld.
- Serve:
- Serve hot with extra sauce, bread, or mashed potatoes.
Tips
- You can also bake them in the oven at 180°C / 350°F for 25–30 minutes.
- Add herbs like thyme, parsley, or bay leaves to the sauce for extra flavor.
- For a vegetarian version, use lentils, mushrooms, or cooked quinoa instead of meat.
