White Chocolate Raspberry Cheesecake

Ingredients

For the crust:

  • 1½ cups graham cracker crumbs
  • ¼ cup granulated sugar
  • 6 tbsp unsalted butter, melted

For the filling:

  • 16 oz cream cheese, softened
  • ½ cup granulated sugar
  • ½ tsp vanilla extract
  • ½ tsp almond extract (optional, enhances flavor)
  • 2 large eggs
  • 6 oz white chocolate, melted and slightly cooled
  • ½ cup sour cream or heavy cream

For the raspberry swirl:

  • 1 cup fresh or frozen raspberries
  • 2 tbsp sugar
  • 1 tsp lemon juice

Optional topping:

  • White chocolate shavings
  • Fresh raspberries
  • Whipped cream

Instructions

1. Prepare the crust

  1. Preheat oven to 325°F (163°C).
  2. Mix graham cracker crumbs, sugar, and melted butter until evenly combined.
  3. Press firmly into the bottom of a 9-inch springform pan.
  4. Bake for 8–10 minutes, then let cool.

2. Make the raspberry swirl

  1. In a small saucepan, combine raspberries, sugar, and lemon juice.
  2. Cook over medium heat for 5–7 minutes until softened.
  3. Strain seeds if desired, and let cool.

3. Make the filling

  1. Beat cream cheese until smooth.
  2. Add sugar, vanilla, and almond extract, mixing well.
  3. Beat in eggs one at a time.
  4. Mix in melted white chocolate and sour cream until smooth.

4. Assemble the cheesecake

  1. Pour half the cheesecake filling over the cooled crust.
  2. Spoon half of the raspberry sauce over the filling and gently swirl with a knife.
  3. Pour the remaining cheesecake filling on top, then swirl the remaining raspberry sauce.

5. Bake

  1. Bake at 325°F (163°C) for 45–55 minutes, until the edges are set but the center still slightly jiggles.
  2. Turn off the oven, crack the door, and let cheesecake cool inside for 1 hour (prevents cracking).
  3. Chill in the refrigerator for at least 4 hours, preferably overnight.

6. Serve

  • Garnish with white chocolate shavings, fresh raspberries, or whipped cream.

Tips & Variations

  • For extra elegance, drizzle warm white chocolate over slices before serving.
  • Use a water bath to prevent cracks if desired.
  • Swap the graham cracker crust for almond or pistachio crust for a nutty twist.
