Here are two simple and delicious recipes — one for Cucumber Tomato Salad and one for Cucumber Tomato Onion Salad. Both are easy to make and refreshing!


Cucumber Tomato Salad Recipe

Ingredients:

  • 2 medium cucumbers, thinly sliced
  • 3 medium tomatoes, chopped or sliced
  • 2 tbsp olive oil
  • 1 tbsp red wine vinegar or lemon juice
  • Salt and pepper, to taste
  • Fresh herbs like dill or parsley (optional)

Instructions:

  1. In a bowl, combine cucumbers and tomatoes.
  2. Drizzle with olive oil and vinegar (or lemon juice).
  3. Season with salt and pepper, toss gently to coat.
  4. Add fresh herbs if you like, and serve chilled.

Cucumber Tomato Onion Salad Recipe

Ingredients:

  • 2 medium cucumbers, thinly sliced
  • 3 medium tomatoes, chopped or sliced
  • 1 small onion, thinly sliced (red or white onion works)
  • 2 tbsp olive oil
  • 1 tbsp vinegar (red wine or apple cider) or lemon juice
  • Salt and pepper, to taste
  • 1 tsp sugar (optional, balances acidity)
  • Fresh herbs like parsley or basil (optional)

Instructions:

  1. Combine cucumbers, tomatoes, and onion in a bowl.
  2. In a small bowl, whisk olive oil, vinegar (or lemon juice), salt, pepper, and sugar if using.
  3. Pour the dressing over the salad and toss gently.
  4. Add fresh herbs if desired. Chill for 15-30 minutes before serving for best flavor.

Both salads are light, fresh, and perfect as a side dish or a quick healthy snack!
