Classic Cucumber Tomato Salad (Serves 4)

Ingredients

  • 2 medium cucumbers, sliced (peeled if desired)

  • Salt & black pepper to taste

Instructions

  1. Prep vegetables: Slice cucumbers, chop tomatoes, and thinly slice onion.
  2. Combine: In a large bowl, toss cucumbers, tomatoes, and onion.
  3. Dress: Drizzle with olive oil and vinegar (or lemon juice).
  4. Season: Add salt, pepper, and oregano (or basil).
  5. Optional: Top with feta or parsley.
  6. Chill: Refrigerate 10–15 minutes before serving for best flavor.

Tips

  • Crispier cucumbers: Salt slices lightly, let sit 10 minutes, then drain excess water.
  • Variations:
    • Add sliced bell peppers, avocado, or olives.
    • Use balsamic vinegar instead of red wine vinegar.
    • Add a touch of honey or Dijon mustard for a simple vinaigrette.
