🥗 Cucumber Tomato Salad

Ingredients

  • 1 large cucumber, sliced or diced
  • 2–3 medium tomatoes, chopped
  • ¼ red onion, thinly sliced (optional)
  • 2 tbsp olive oil
  • 1 tbsp lemon juice or vinegar
  • Salt & pepper to taste
  • Optional: fresh herbs like parsley, basil, or dill

Instructions

  1. Prep veggies
    • Slice cucumber and tomatoes.
    • Thinly slice onion if using.

  3. Combine
