🍰 Crumb Cake (Soft Cake with Crunchy Topping)
A classic dessert with a soft base and sweet, buttery crumb topping—perfect for coffee or tea time.
Ingredients (8 servings)
Cake:
- 1½ cups all-purpose flour
- 1 tsp baking powder
- ½ tsp baking soda
- ¼ tsp salt
- ¾ cup sugar
- ½ cup butter, softened
- 2 eggs
- ½ cup milk
- 1 tsp vanilla extract
Crumb Topping:
- ½ cup all-purpose flour
- ½ cup sugar
- ¼ cup butter, cold and cubed
- 1 tsp cinnamon (optional)
Instructions
- Preheat oven: 180°C / 350°F. Grease and flour a baking pan.
- Make cake batter:
- Beat butter and sugar until fluffy.
- Add eggs one at a time, then vanilla.
- Mix in flour, baking powder, baking soda, salt, and milk until smooth.
- Make crumb topping:
- Combine flour, sugar, and cinnamon.
- Cut in cold butter until mixture resembles coarse crumbs.
- Assemble cake:
- Pour batter into the pan.
- Sprinkle crumb topping evenly over the cake.
- Bake: 35–40 minutes until a toothpick comes out clean.
- Cool & serve: Slice and enjoy warm or at room temperature.
Tips
- Add chopped nuts or chocolate chips to the topping for extra flavor.
- Serve with a dusting of powdered sugar or a drizzle of glaze.
- For a mini crumb cake version, bake in muffin tins 18–20 minutes.
