- 1 cup breadcrumbs
- 2 eggs, beaten
- Oil for frying
Instructions
- Prepare filling:
- Mix mashed potatoes (or béchamel + meat/cheese) with salt, pepper, and onions if using.
- Shape into small cylinders or balls.
- Coat croquettes:
- Dip each croquette into the beaten eggs, then roll in breadcrumbs until fully coated.
- Fry:
- Heat oil in a pan over medium heat.
- Fry croquettes 3–4 minutes per side until golden brown.
- Drain on paper towels.
- Serve:
- Serve hot with ketchup, aioli, or your favorite dipping sauce.
Tips
- For extra crispiness, double-coat: egg → breadcrumbs → egg → breadcrumbs.
- You can bake croquettes at 200°C / 400°F for 15–20 minutes for a lighter version.
