Crock Pot Chicken and Gravy

Ingredients (serves 4–6)

  • 4 boneless, skinless chicken breasts (or thighs)
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 2 cups chicken broth
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp dried thyme or rosemary
  • ½ tsp paprika (optional)
  • 3 tbsp cornstarch
  • 3 tbsp cold water
  • Optional: 1 cup sliced mushrooms, 1 cup carrots or celery

Instructions

  1. Prepare the crock pot
    • Place chicken, onion, garlic, and optional vegetables in the crock pot.
    • Pour chicken broth over, season with salt, pepper, thyme, and paprika.
  2. Cook
    • Cover and cook on low for 6–7 hours or high for 3–4 hours, until chicken is tender.
  3. Make the gravy
    • Remove chicken and keep warm.
    • In a small bowl, mix cornstarch and cold water to make a slurry.
    • Stir slurry into the crock pot liquid.
    • Turn crock pot to high and cook 10–15 minutes, stirring occasionally, until thickened.
  4. Serve
    • Slice or shred chicken, pour gravy over the top.
    • Serve with mashed potatoes, rice, or vegetables.

Tips & Variations

  • Extra flavor: Sear chicken in a skillet before adding to crock pot for richer taste.
  • Herb variation: Use sage, oregano, or a bay leaf.
  • Creamy version: Stir in ¼ cup heavy cream or sour cream before serving.
  • Slow cooker shortcut: Use pre-cooked rotisserie chicken and just make gravy in the crock pot.
