Creamy Italian Sausage Pasta

Ingredients (4 servings)

  • 12 oz (340 g) pasta (penne, rigatoni, or fettuccine)
  • 1 lb (450 g) Italian sausage (mild or spicy), casings removed
  • 1 tablespoon olive oil
  • 1 small onion, finely chopped
  • 2–3 garlic cloves, minced
  • 1 cup heavy cream
  • ½ cup chicken broth (or pasta water)
  • ½ cup grated Parmesan cheese
  • Salt & pepper, to taste
  • Optional: red pepper flakes, chopped parsley, or spinach

Instructions

  1. Cook pasta: According to package directions. Reserve ½ cup pasta water, then drain.
  2. Cook sausage: In a large skillet, heat olive oil over medium heat. Add sausage and cook until browned, breaking it up with a spoon.
  3. Sauté aromatics: Add onion and garlic to the skillet. Cook 2–3 minutes until softened.
  4. Make sauce: Pour in heavy cream and chicken broth. Bring to a simmer. Stir in Parmesan until melted.
  5. Combine pasta: Add drained pasta to the skillet. Toss to coat, adding reserved pasta water as needed to loosen sauce.
  6. Season & serve: Add salt, pepper, and optional red pepper flakes. Top with parsley or extra Parmesan. Serve warm.

Tips & Variations

  • Veggie boost: Add spinach, bell peppers, or mushrooms while sautéing onions.
  • Spicy kick: Use hot Italian sausage or add crushed red pepper flakes.
  • Cheesy: Mix in mozzarella for extra creaminess.
