Creamy Garlic Butter Chicken & Linguine Alfredo

(Serves 4)

Ingredients

For the chicken

  • 2 large boneless, skinless chicken breasts, sliced
  • Salt and black pepper to taste
  • 1 tsp Italian seasoning
  • 2 tbsp butter
  • 1 tbsp olive oil
  • 4 cloves garlic, minced

For the pasta

  • 12 oz linguine
  • Salt for pasta water

For the Alfredo sauce

  • 3 tbsp butter
  • 3 cloves garlic, minced
  • 1 ½ cups heavy cream
  • 1 cup freshly grated Parmesan cheese
  • ½ tsp garlic powder
  • ¼ tsp nutmeg (optional but classic)
  • Salt and black pepper to taste
  • ¼ cup pasta cooking water (as needed)

Optional garnish

  • Fresh parsley
  • Extra Parmesan
  • Red pepper flakes

Instructions

1. Cook the pasta

  • Bring a large pot of salted water to a boil.
  • Cook linguine according to package directions until al dente.
  • Reserve ¼ cup pasta water, then drain.

2. Cook the chicken

  • Season chicken with salt, pepper, and Italian seasoning.
  • Heat olive oil and butter in a large skillet over medium-high heat.
  • Add chicken and cook 4–5 minutes per side until golden and cooked through.
  • Add garlic and cook 30 seconds until fragrant.
  • Remove chicken from skillet and set aside.

3. Make the Alfredo sauce

  • In the same skillet, melt butter over medium heat.
  • Add garlic and sauté 30 seconds.
  • Pour in heavy cream and bring to a gentle simmer (do NOT boil).
  • Stir in Parmesan, garlic powder, nutmeg, salt, and pepper.
  • Simmer 3–5 minutes until thickened.

4. Combine

  • Add cooked linguine to the sauce, tossing to coat.
  • Add pasta water a little at a time if needed for creaminess.
  • Slice chicken and return it to the skillet, mixing gently.

5. Serve

  • Garnish with parsley, extra Parmesan, and red pepper flakes if desired.
  • Serve immediately.

Tips for Best Flavor

  • Use freshly grated Parmesan (pre-shredded won’t melt as smoothly).
  • Keep heat low when adding cheese to avoid grainy sauce.
  • Add sautéed mushrooms or spinach for a delicious variation.
