Ingredients (serves 2–3)

For the chicken:

  • 2 chicken breasts, cut into bite-sized pieces
  • 1–2 tbsp butter
  • 1 tsp garlic powder or 2 cloves garlic, minced
  • Salt & pepper to taste

For the pasta & sauce:

  • 6 oz (about half a box) linguine or spaghetti
  • 1 cup heavy cream or half-and-half
  • 1/2 cup grated Parmesan cheese
  • 1–2 tbsp butter
  • 1 tsp garlic, minced
  • Salt & pepper to taste
  • Optional: chopped parsley for garnish

Instructions

  1. Cook the pasta:
    • Boil linguine according to package directions. Drain and set aside.
  2. Cook the chicken:
    • In a large skillet, melt butter over medium heat.
    • Add chicken, season with salt, pepper, and garlic.
    • Cook until golden and fully cooked (5–7 minutes). Remove from skillet and set aside.
  3. Make the creamy sauce:
    • In the same skillet, melt butter and sauté garlic for 30 seconds.
    • Add cream and bring to a gentle simmer.
    • Stir in Parmesan cheese until smooth and creamy. Season with salt & pepper.
  4. Combine:
    • Add cooked chicken and pasta to the sauce. Toss to coat everything evenly.
  5. Serve:
    • Garnish with chopped parsley and extra Parmesan if desired.

Tips:

  • Extra cheesy: Add more Parmesan or a little mozzarella for gooeyness.
  • Veggie boost: Toss in broccoli, peas, or spinach while cooking the sauce.
  • Shortcut: Use pre-cooked chicken to save 5–7 minutes.
