  • 200g (about 2 cups) crushed biscuits (like digestive or graham crackers)
  • 100g (7 tbsp) melted butter

For the filling:

  • 500g cream cheese (softened)
  • 1 cup (200g) sugar
  • 3 eggs
  • 1 tsp vanilla extract
  • 1 cup (240ml) heavy cream (or whipping cream)
  • 1 tbsp lemon juice (optional, for slight tang)

  1. Prepare the crust
    • Mix crushed biscuits with melted butter.
    • Press into the bottom of a springform pan.
    • Chill in the fridge for 20–30 minutes.

    • Add eggs one at a time, mixing gently.
    • Stir in vanilla, cream, and lemon juice.
  3. Bake
    • Pour filling over the crust.

  4. Cool
    • Let it cool at room temperature, then refrigerate for at least 4 hours (overnight is best).
