🍞 Cranberry Bread

A moist, slightly sweet quick bread with bursts of tart cranberries—perfect for breakfast, snacks, or during the Thanksgiving and Christmas season.

🧾 Ingredients

  • 2 cups all-purpose flour
  • 1 cup sugar
  • 1½ tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • ¾ cup orange juice
  • 1 tbsp orange zest (optional but recommended)
  • 2 tbsp vegetable oil or melted butter
  • 1 egg
  • 1½ cups fresh or frozen cranberry (chopped if large)
  • ½ cup chopped walnuts or pecans (optional)

  1. Preheat oven
    Set oven to 350°F (175°C). Grease a 9×5-inch loaf pan.
  2. Mix dry ingredients
    In a bowl whisk together flour, sugar, baking powder, baking soda, and salt.
  3. Mix wet ingredients
    In another bowl combine orange juice, orange zest, oil, and egg.
  4. Combine
    Pour wet mixture into dry ingredients and stir just until combined.
    Fold in cranberries and nuts.
  5. Bake
    Pour batter into the loaf pan and bake 50–60 minutes or until a toothpick inserted in the center comes out clean.
  6. Cool
    Let the bread cool in the pan for about 10 minutes, then transfer to a rack.

🍽️ Serving Ideas

  • Spread with butter or cream cheese
  • Lightly toasted for breakfast
  • Drizzled with a simple orange glaze

Mix:

  • 1 cup powdered sugar
  • 2–3 tbsp orange juice

Drizzle over cooled bread.
