Cranberry Cream Cheese Loaf Cake 🍰

A cranberry cream cheese loaf cake is a soft, moist loaf cake with tangy cranberries and creamy cheese flavor. It’s slightly sweet, a little tart, and great with tea or coffee. ☕🍓

🧾 Ingredients

For the cake

  • 1½ cups all-purpose flour
  • 1 tsp baking powder
  • ½ tsp salt
  • ½ cup butter (softened)
  • ¾ cup sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • ½ cup milk
  • 1 cup fresh or dried cranberries

For the cream cheese layer

  • 200 g cream cheese
  • ¼ cup sugar
  • 1 egg
  • ½ tsp vanilla extract

👩‍🍳 Instructions

  1. Preheat oven to 180°C (350°F) and grease a loaf pan.
  2. Mix dry ingredients: flour, baking powder, and salt in a bowl.
  3. Cream butter and sugar until light and fluffy.
  4. Add eggs and vanilla, mix well.
  5. Add milk and dry ingredients, mix until smooth.
  6. Fold in cranberries.
  7. In another bowl, mix cream cheese, sugar, egg, and vanilla until smooth.
  8. Layer the batter in the pan:
    • Half cake batter
    • Cream cheese mixture
    • Remaining batter
  9. Bake for 50–60 minutes until a toothpick comes out clean.
  10. Let cool before slicing.

🍽️ Optional Topping

  • Powdered sugar
  • Lemon glaze
  • Extra cranberries on top

✨ Tip: Toss cranberries in a little flour before adding them so they don’t sink to the bottom.
