Country Apple Fritter Bread

Ingredients (loaf, serves 8–10)

For the bread:

  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg (optional)
  • 1/2 cup sugar
  • 1/4 cup brown sugar
  • 2 large eggs
  • 1/2 cup vegetable oil
  • 1 tsp vanilla extract
  • 1 1/2 cups peeled and chopped apples (about 2 medium apples)

For the topping swirl:

  • 1/4 cup sugar
  • 1 tsp cinnamon

Instructions

  1. Preheat oven: 350°F (175°C). Grease a 9×5-inch loaf pan.
  2. Mix dry ingredients:
    • In a bowl, combine flour, baking soda, salt, cinnamon, and nutmeg.
  3. Mix wet ingredients:
    • In another bowl, whisk eggs, oil, vanilla, sugar, and brown sugar.
  4. Combine:
    • Add dry ingredients to wet ingredients. Stir until just combined.
    • Fold in chopped apples.
  5. Add cinnamon-sugar swirl:
    • Pour half the batter into the loaf pan.
    • Sprinkle half the cinnamon-sugar mixture.
    • Add the rest of the batter on top and sprinkle remaining cinnamon-sugar.
    • Swirl gently with a knife.
  6. Bake:
    • Bake 50–60 minutes, or until a toothpick comes out clean.
  7. Cool:
    • Let bread cool in pan 10 minutes, then transfer to a wire rack to cool completely.

Tips & Variations

  • Extra sweetness: Drizzle with simple powdered sugar glaze after cooling.
  • Nutty version: Add 1/2 cup chopped walnuts or pecans.
  • Mini loaves or muffins: Divide batter into muffin tins for apple fritter muffins.
