Cornbread Casserole
Ingredients (serves ~6–8)
- 1 box (8–9 oz) cornbread mix (like Jiffy)
- 1 can (15 oz) whole kernel corn, drained
- 1 can (15 oz) creamed corn
- 1 cup sour cream
- ½ cup melted butter
- 2 eggs
- Optional add-ins:
- 1 cup shredded cheddar cheese
- ½ cup cooked bacon or sausage
- ½ cup diced jalapeños (mild or spicy)
Instructions
- Preheat oven to 350°F (175°C). Grease a 9×13-inch baking dish.
- Mix
In a large bowl, whisk eggs, sour cream, and melted butter.
Stir in cornbread mix, whole corn, creamed corn, and any add-ins. - Bake
