Here’s a classic, cozy cornbread casserole—easy and super comforting 🌽

Cornbread Casserole

Ingredients (serves ~6–8)

  • 1 box (8–9 oz) cornbread mix (like Jiffy)
  • 1 can (15 oz) whole kernel corn, drained
  • 1 can (15 oz) creamed corn
  • 1 cup sour cream
  • ½ cup melted butter
  • 2 eggs
  • Optional add-ins:
    • 1 cup shredded cheddar cheese
    • ½ cup cooked bacon or sausage
    • ½ cup diced jalapeños (mild or spicy)

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×13-inch baking dish.
  2. Mix
    In a large bowl, whisk eggs, sour cream, and melted butter.
    Stir in cornbread mix, whole corn, creamed corn, and any add-ins.
  3. Bake
    Pour into baking dish.
    Bake 40–45 minutes, until golden on top and set in the center.
  4. Cool & serve
    Let rest 5–10 minutes before serving.

Tips

  • For extra moisture, add ¼ cup milk
  • For a sweeter casserole, add 1–2 tbsp sugar
  • Great with BBQ, chili, or holiday meals
