Classic Peanut Butter Balls

Ingredients (makes about 24 balls)

  • 1 cup creamy peanut butter
  • ½ cup unsalted butter, softened
  • 2 cups powdered sugar
  • 1 tsp vanilla extract
  • 2 cups semisweet chocolate chips (or milk chocolate)
  • 2 tsp shortening or coconut oil (optional, for smoother chocolate coating)

Instructions

  1. Mix the filling
    • In a large bowl, combine peanut butter, softened butter, powdered sugar, and vanilla extract.
    • Mix until smooth and well combined.
  2. Shape into balls
    • Scoop about 1 tablespoon of mixture and roll into balls.
    • Place balls on a baking sheet lined with parchment paper.
  3. Chill
    • Refrigerate the balls for at least 30 minutes to firm up.
  4. Coat with chocolate
    • Melt chocolate chips (and shortening/coconut oil if using) in a microwave-safe bowl in 30-second intervals, stirring until smooth.
    • Dip each peanut butter ball into melted chocolate, using a fork to coat evenly. Return to the parchment-lined sheet.
  5. Set
    • Refrigerate until chocolate is firm, about 1 hour.

Tips & Variations

  • Crunchy version: Use crunchy peanut butter instead of creamy.
  • Nutty twist: Roll balls in crushed peanuts before chocolate hardens.
  • Flavor add-ins: Add a pinch of salt, cinnamon, or a few drops of peppermint extract for variety.
  • Storage: Keep refrigerated for up to 2 weeks or freeze for longer storage.
