Chocolate Éclair Cake 🍫🍰 — an easy, no-bake dessert that tastes like a classic chocolate éclair but comes together with simple layers of graham crackers, creamy pudding, and rich chocolate topping.


Classic No-Bake Chocolate Éclair Cake (Serves 8–12)

🥛 Ingredients

  • 2 (3.4 oz) boxes instant vanilla pudding mix
  • 3 cups cold milk
  • 1 (8 oz) container whipped topping (like Cool Whip), thawed
  • 1 box graham crackers
  • 1 container chocolate frosting (or homemade ganache)

Instructions

1️⃣ Make the Cream Layer

  • Whisk pudding mix and cold milk for about 2 minutes until thickened.
  • Gently fold in whipped topping until smooth.

2️⃣ Layer the Cake

In a 9×13-inch dish:

  • Layer graham crackers to cover the bottom.
  • Spread half of the pudding mixture over crackers.
  • Add another layer of graham crackers.
  • Spread remaining pudding mixture.
  • Top with a final layer of graham crackers.

3️⃣ Add Chocolate Topping

  • Microwave chocolate frosting 10–15 seconds to soften.
  • Spread evenly over top layer.

4️⃣ Chill

  • Refrigerate at least 6 hours (overnight is best).
  • The graham crackers soften into cake-like layers.

Optional Homemade Chocolate Topping (Richer Flavor)

Instead of canned frosting:

  • 1 cup semi-sweet chocolate chips
  • ½ cup heavy cream

Heat cream until hot (not boiling), pour over chocolate chips, let sit 2 minutes, then stir smooth. Pour over top and chill.


Tips

  • Chill overnight for best texture.
  • Add a layer of sliced bananas for variation.
  • Use French vanilla pudding for deeper flavor.
