Chili con carne

Here’s a classic Chili con Carne recipe—hearty, flavorful, and perfect for a cozy meal. It’s flexible, so you can make it mild or spicy depending on your taste.


Ingredients (Serves 4–6)

  • 1 lb (450 g) ground beef
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 bell pepper, diced (optional)
  • 1–2 tbsp chili powder (adjust to taste)
  • 1 tsp ground cumin
  • 1 tsp smoked paprika (optional, for depth)
  • 1/2 tsp cayenne pepper (optional, for heat)
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 can (14.5 oz / 410 g) diced tomatoes
  • 1 can (15 oz / 425 g) kidney beans or black beans, drained and rinsed
  • 1 cup beef or chicken broth
  • 1 tbsp tomato paste (optional, for richness)
  • Optional toppings: shredded cheese, sour cream, chopped cilantro, diced onions

Instructions

  1. Cook the beef:
    • In a large pot or Dutch oven over medium heat, cook the ground beef until browned. Drain excess fat if necessary.
  2. Add veggies and spices:
    • Add onion, garlic, and bell pepper. Cook 3–5 minutes until softened.
    • Stir in chili powder, cumin, smoked paprika, cayenne, salt, and pepper. Cook 1–2 minutes until fragrant.
  3. Add liquids and beans:
    • Stir in diced tomatoes, tomato paste, broth, and beans. Bring to a simmer.
  4. Simmer the chili:
    • Reduce heat to low and simmer uncovered for 30–45 minutes, stirring occasionally.
    • Taste and adjust seasoning—add more salt, pepper, or chili powder as needed.
  5. Serve:
    • Spoon into bowls and add optional toppings like cheese, sour cream, cilantro, or chopped onions.
    • Serve with cornbread, rice, or tortilla chips.

Tips:

  • For a thicker chili, simmer longer uncovered to reduce the liquid.
  • For extra flavor, you can add a splash of Worcestershire sauce or a small piece of dark chocolate while simmering—it adds richness.
