Instructions
- Cook chicken
- Place chicken in a large pot with water or broth.
- Add bay leaves, thyme, and a pinch of salt.
- Bring to a boil, then reduce heat and simmer 40β50 minutes until chicken is cooked through.
- Prep vegetables
- Add carrots, celery, onion, and garlic to the pot.
- Simmer another 20β25 minutes until vegetables are tender.
- Shred chicken
- Remove chicken, let cool slightly, shred meat, and discard bones/skin if desired.
- Return shredded chicken to the pot.
- Add optional starch
- Stir in noodles, rice, or dumplings and cook until tender (5β10 minutes).
- Season & serve
- Adjust salt and pepper.
- Garnish with fresh parsley and serve hot.
