Ingredients (4 servings)

  • 3–4 lbs (1.5–2 kg) chicken pieces (thighs and drumsticks recommended)

  • 2 medium onions, finely chopped
  • 2–3 cloves garlic, minced
  • 2–3 tbsp sweet Hungarian paprika (adjust to taste)
  • 1 tsp smoked paprika (optional, for depth)
  • 2 cups chicken broth
  • 1 cup diced tomatoes (optional)
  • ½ tsp caraway seeds (optional)
  • Salt & black pepper, to taste
  • ½ cup sour cream (for finishing)
  • Fresh parsley, chopped (for garnish)

Directions

Step 1: Brown the chicken

  1. Heat oil or butter in a large pot or deep skillet over medium heat.
  2. Season chicken with salt and pepper, then brown on all sides (3–4 minutes per side). Remove and set aside.

Step 2: Sauté the aromatics

  1. In the same pot, add onions and cook until translucent.
  2. Add garlic and cook for 30 seconds.

Step 3: Add paprika & liquids

  1. Remove the pot from heat briefly and stir in paprika to prevent burning.
  2. Return chicken to the pot.
  3. Add chicken broth, tomatoes (if using), and caraway seeds. Bring to a gentle simmer.

Step 4: Simmer

  1. Cover and cook 40–50 minutes, until chicken is tender and cooked through.

Step 5: Finish with sour cream

  1. Remove chicken pieces from the pot.
  2. Stir sour cream into the sauce off the heat to prevent curdling.
  3. Return chicken to the sauce and gently warm.

Step 6: Serve

  • Garnish with chopped fresh parsley.
  • Traditionally served over egg noodles (nokedli), rice, or dumplings.

Tips

  • Sour cream must be added off heat to avoid curdling.
  • For a richer flavor, sauté paprika briefly in oil before adding onions.
  • Leftovers taste even better the next day as flavors meld.
  • Can add a few bell pepper slices for extra color and sweetness.
