Chicken Fritters

Ingredients

  • 2 cups cooked or raw chicken breast, finely chopped or shredded
  • 2 eggs
  • ⅓ cup all-purpose flour
  • ¼ cup mayonnaise (or Greek yogurt)
  • ½ cup shredded cheese (cheddar or mozzarella)
  • 2 tablespoons green onions, chopped
  • 1 clove garlic, minced
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon paprika (optional)
  • 2–3 tablespoons oil for frying

Instructions

  1. Prepare the mixture
    In a bowl combine chicken, eggs, flour, mayonnaise, cheese, green onions, garlic, salt, pepper, and paprika. Mix well.
  2. Heat the pan
    Heat oil in a skillet over medium heat.
  3. Form fritters
    Scoop about 2 tablespoons of the mixture into the pan and flatten slightly.
  4. Cook
    Fry for 3–4 minutes per side until golden brown and cooked through.
  5. Drain and serve
    Place on paper towels to remove excess oil.

  • Serve with garlic yogurt sauce, ranch, or sweet chili sauce.
  • Pair with a fresh salad or roasted vegetables.

  • Use rotisserie chicken for faster preparation.
  • Add corn, bell peppers, or herbs for extra flavor.
  • For a healthier option, bake at 375°F (190°C) for about 20 minutes, flipping halfway.
