Oven-Baked Chicken and Rice

Ingredients (serves 3–4)

  • 1 cup uncooked long-grain white rice
  • 2 cups chicken broth
  • 4 chicken thighs or drumsticks (bone-in works best)
  • 1 tbsp olive oil or melted butter
  • 1 tsp garlic powder
  • 1 tsp paprika
  • Salt & pepper to taste
  • Optional: 1/2 cup frozen peas or carrots

Instructions

  1. Preheat oven: 375°F (190°C). Grease a baking dish.
  2. Prepare the rice:
    • Spread uncooked rice evenly in the baking dish.
    • Pour chicken broth over the rice.
    • Add veggies if using. Stir gently.
  3. Season the chicken:
    • Rub chicken with oil or butter.
    • Sprinkle with garlic powder, paprika, salt, and pepper.
  4. Assemble:
    • Place chicken pieces on top of the rice.
  5. Bake:
    • Cover tightly with foil and bake 40 minutes.
    • Remove foil and bake another 15–20 minutes until chicken is golden and rice is tender.
  6. Serve:
    • Let rest 5 minutes before serving.

Tips

  • Extra flavor: Add a little onion powder or Italian seasoning.
  • Crispier chicken: Broil for 2–3 minutes at the end (ask an adult for help).
  • Creamy version: Stir in 1/4 cup cream or sour cream before serving.
