Easy One-Pan Chicken and Rice
Ingredients
- 2 chicken breasts (or 4 thighs)
- 1 cup long-grain white rice
- 2 cups chicken broth
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 teaspoon paprika (optional)
- ½ teaspoon dried thyme or Italian seasoning
Instructions
- Season the chicken
Sprinkle both sides with salt, pepper, paprika, and thyme. - Sear the chicken
Heat oil in a large pan over medium heat.
Cook chicken 4–5 minutes per side until golden (not fully cooked).
Remove and set aside. - Cook aromatics
In the same pan, sauté onion for 2–3 minutes.
Add garlic and cook 30 seconds. - Add rice
Stir in uncooked rice and toast for 1 minute. - Simmer
Pour in chicken broth and stir.
Place chicken back on top.
Cover and simmer on low for 18–22 minutes until rice is tender and chicken is cooked through. - Rest & serve
Let sit covered for 5 minutes. Fluff rice and serve.
