Instructions

1. Cook the chicken and vegetables

  1. In a large pot, add chicken, onion, carrots, celery, chicken broth, thyme, salt, and pepper.
  2. Bring to a boil, then reduce heat and simmer 20–25 minutes, until chicken is cooked and vegetables are tender.
  3. Remove chicken, shred it with forks, and return it to the pot. Discard bay leaf if used.

2. Make the creamy base

  1. In a small pan, melt butter over medium heat.
  2. Stir in flour and cook 1–2 minutes until golden.
  3. Gradually whisk in milk or cream until smooth.
  4. Add to the chicken pot, stirring until the stew thickens.

3. Prepare the dumplings

  1. In a bowl, mix flour, baking powder, and salt.
  2. Cut in butter until mixture resembles coarse crumbs.
  3. Stir in milk until a soft dough forms.

4. Cook the dumplings

  1. Drop spoonfuls of dough onto the simmering stew (about 1-inch pieces).
  2. Cover the pot and simmer 10–15 minutes, do not lift the lid, until dumplings are cooked through.

5. Serve

  • Ladle chicken, vegetables, and dumplings into bowls.
  • Optional: garnish with fresh parsley.
