Chicken and Dumplings (Serves 4–6)

Ingredients

For the Chicken Soup Base

  • 1 lb boneless, skinless chicken breasts or thighs
  • 6 cups chicken broth
  • 2 medium carrots, sliced
  • 2 celery stalks, sliced
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 tsp dried thyme
  • 1 tsp salt (adjust to taste)
  • ½ tsp black pepper
  • 2 tbsp butter or oil

For the Dumplings

  • 1½ cups all-purpose flour
  • 2 tsp baking powder
  • ½ tsp salt
  • 2 tbsp cold butter, cut into small pieces
  • ½ cup milk (adjust slightly for dough consistency)

Instructions

1. Cook the chicken

  1. In a large pot, melt butter over medium heat.
  2. Add onion, garlic, carrots, and celery. Sauté 3–5 minutes until slightly softened.
  3. Add chicken, chicken broth, thyme, salt, and pepper.
  4. Bring to a simmer and cook 20–25 minutes, until chicken is cooked through.
  5. Remove chicken, shred with two forks, and return to the pot.

2. Make the dumplings

  1. In a bowl, mix flour, baking powder, and salt.
  2. Cut in butter until mixture resembles coarse crumbs.
  3. Stir in milk until dough comes together (slightly sticky).

3. Cook the dumplings

  1. Drop spoonfuls of dough into the simmering soup (about 1 tbsp per dumpling).
  2. Cover pot and simmer 10–12 minutes—do not lift lid, dumplings need steam to cook.

4. Serve

  • Taste and adjust seasoning.
  • Ladle chicken, vegetables, and dumplings into bowls and serve warm.

Tips

  • Flavor boost: Add a splash of cream or a pat of butter at the end for richness.
  • Vegetable variations: Add peas, corn, or potatoes for extra heartiness.
  • Make-ahead: Cook chicken and veggies, refrigerate, then drop in dumplings just before serving.

Variations

  • Southern-style: Use self-rising flour for fluffier dumplings.
  • Herb-packed: Add parsley, sage, or dill to the dumpling dough.
  • Slow cooker version: Cook chicken and veggies in crock pot; drop in dumplings last 30 minutes of cooking.
