Yum — Cheesy Rotel Tacos are quick, gooey, and packed with Tex-Mex flavor 🌮🧀
Here’s an easy, crowd-pleasing version:


Cheesy Rotel Tacos

Ingredients (serves 4)

  • 1 lb (450 g) ground beef or ground chicken
  • 1 packet taco seasoning
  • 1 can (10 oz) Rotel (diced tomatoes & green chilies), undrained
  • 1 cup shredded cheese (cheddar, Colby-Jack, or Mexican blend)
  • Taco shells or soft tortillas
  • Optional toppings: lettuce, sour cream, salsa, jalapeños

Instructions

  1. Cook the meat
    • In a skillet over medium heat, cook ground meat until browned.
    • Drain excess grease if needed.
  2. Add flavor
    • Stir in taco seasoning and Rotel.
    • Simmer 5–7 minutes until slightly thickened.
  3. Make it cheesy
    • Lower heat and stir in shredded cheese until melted and creamy.
  4. Assemble tacos
    • Spoon cheesy Rotel mixture into taco shells or tortillas.
    • Add your favorite toppings.
  5. Serve hot
    • Best enjoyed right away while extra cheesy!
