Cheesy Carrot Flatbreads

Ingredients (makes 6–8 flatbreads)

  • 1 cup finely grated carrots
  • 1 cup all-purpose flour (or whole wheat)
  • ½ cup shredded cheese (cheddar or mozzarella)
  • ½ tsp baking powder
  • ½ tsp salt
  • 2–3 tbsp yogurt or milk
  • 1 tbsp oil or melted butter

Instructions

  1. Make dough:
    • In a bowl, mix carrots, flour, cheese, baking powder, and salt.
    • Add yogurt (or milk) and oil; mix into a soft dough.
  2. Rest:
    • Cover and let dough rest 10 minutes.
  3. Shape:
    • Divide dough into 6–8 balls.
    • Roll each into a thin flatbread.
  4. Cook:
    • Heat a skillet over medium heat.
    • Cook flatbreads 2–3 minutes per side until golden spots appear and cheese melts inside.
  5. Serve:
    • Brush lightly with butter if desired and serve warm.

  • Herby: Add garlic powder or dried herbs to the dough.
  • Extra cheesy: Sprinkle more cheese inside before rolling.
  • No oven needed: These are stovetop only.
