Ingredients (Serves 4–6)

  • 2 cups cooked rice (white, brown, or a mix)
  • 3 cups broccoli florets (fresh or frozen, lightly steamed)
  • 2 cups shredded cheddar cheese (or mix with mozzarella)
  • 1 can (10.5 oz) cream of mushroom soup (or cream of chicken)
  • ½ cup milk
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • ½ tsp black pepper
  • ¼ tsp salt (optional, depending on cheese/soup)
  • ½ cup breadcrumbs or crushed Ritz crackers (optional topping)
  • 2 tbsp butter (optional, for topping)

Instructions

  1. Preheat oven:
    350°F (175°C). Grease a 9×13-inch baking dish.
  2. Mix casserole:
    In a large bowl, combine cooked rice, broccoli, 1½ cups cheese, cream soup, milk, onion, garlic, salt, and pepper. Stir until well mixed.
  3. Transfer to baking dish:
    Pour mixture into prepared dish. Sprinkle remaining cheese on top.
  4. Optional topping:
    Mix breadcrumbs with melted butter and sprinkle over casserole for extra crunch.
  5. Bake:
    Cover with foil and bake 25 minutes. Remove foil and bake 10–15 minutes more until cheese is bubbly and topping is golden.
  6. Serve hot:
    Perfect as a side dish or a vegetarian main.
