Cheesecake

Cheesecake is a rich, creamy dessert made with cream cheese, usually on a crumb crust. Here’s a clear, classic version that’s easy to make.


Classic Cheesecake

Crust

  • 1½ cups crushed graham crackers (or digestive biscuits)
  • ⅓ cup melted butter
  • 2 tablespoons sugar

Mix and press into the bottom of a pan. Bake at 175°C / 350°F for 10 minutes.

Filling

  • 450 g (16 oz) cream cheese, softened
  • ¾ cup sugar
  • 2 eggs
  • 1 teaspoon vanilla
  • ½ cup sour cream or heavy cream

Beat until smooth, pour over crust.

Bake

  • Bake at 160°C / 325°F for 45–55 minutes
  • Center should jiggle slightly
  • Cool slowly, then chill at least 4 hours

  • Chocolate or caramel drizzle
  • Lemon curd
  • Fresh fruit
